Just love the weekends cause the copper pot gets to smoke, so just simple wings for dinner tonight.

Just seasoned with big bald BBQ rub. It makes perfect wings IMOP!

On the pre warmed camber.

I’m doing a blend of oak and cherry tonight.

It creates nice heat via the oak and nice flavor with the cherry.

The copper pot is sitting right & 235 - 250, nothing but TBS!

I will pull these when the IT hits 155-160, then the will go under the broiler to crisp the skin ant take the IT to 170

PS - I feel sorry for you folks in the polar vortex! It hit 50 today at the house, hiwevet I feel winter has yet to hit us.....
 
Love the whole wings like that . Told you before , but have to say again ,,, you did a very nice job on the smoker .
 
Thanks chopsaw! I have to say it was a fun build but now turning out to be a very rewarding build! I’m still learning it but practice makes perfect right!

Whole wings are my fav!!!

Thanks motocrash! This is the reason I went on a 2.5 mile walk about and skipped lunch!
 
Alfredo:
5/3C heavy cream
5tbs butter
Put both in sauce pan on simmer, once warm and butter is melted add 1C parm (freshly grated good stuff from Italy!), salt & garlic to taste, once parm is melted add pre-cooked pasta and slowly simmer, can add some fresh chopped herbs at this point. Continue to simmer till sauce till a firm cream.
Sprinkle with fresh parm and eat while warm! Goes good with with smoked wings :emoji_wink:

Thanks Warren! I appreciate the complements on the build! And the likes on the meal! The build was a long and slow but rewarding activity....kinda like smoking low and slow lol!

I’m getting really excited to start the hybrid build that my son and I have been designing....it has to be completed and functioning by May for him to get a A in his class.
