A friend of mine just returned from a S.Texas Nilgai hunt and brought back a bunch of meat. I will be making jerky,sausage & snack sticks over the next few days. Nilgai meat is as good or better than venison. I will post pics of the product when done.
 
Nilgai is a large antelope native to India. They were imported to S.Texas ranches years ago and now roam free in some areas.

I wanna stuff Nilgai to
 
I started with 4.5 lbs of Nilgai meat and 2.5 lbs of pork butt. I used hi-mountain sweet & spicy snack stick seasoning and cure then added a little garlic powder and crushed red pepper. I cooked a small sample patty and it was great. Stuffed the mixture in the casing and it is ready for the smoker tonight.
 
This is a sampling of what I did with the Nilgai -  JERKY - SNACK STIX & BURRITOS !!  All came out delicious ~
