Hi you all. I am new to forums and have never smoked a piece of meat.I was fortunate enough to try some chicken quarters a few weeks ago and was blown away by how good they tasted.
So the quest begins. As I write this it's kind of humorous that I have 2 racks of ribs in my oven, slow cooking at 225. I haven't decided on a smoker yet. That's why I am here. To learn from you all before I spend my money. I am retired and enjoy family outings and my church. Love photography, food,coffee. Not necessarily in that order.
 
RKWagner, welcome to SMF!  Glad you're here from South Texas and on the hunt for a smoker.  Spent some time myself in Kingsville a few decades ago. 

Figuring out what smoker is best for your tastes and hands-on involvement is half the fun and frustration.   Personally, I just went with what I know best, charcoal and wood chunks.  Year-round available fuel, competition level flavor, practically hands off, and you can sleep peacefully on long smokes.  Once you'll get started with your own smoker, you'll only use the oven when you don't want to get soaking wet in the rain, and sometimes even that doesn't stop me.
