Hi all,
I have been smoking meat for the last 15+ years and recently found this site while looking for some information about a new smoker. I've had (and burned out several heating elements) of several electric smokers and currently have the Old Smokey gas model that has served me well. As a matter of fact, I'm smoking a brisket flat on it as I write this.
I've always "cheated" with gas and electric smokers because I like the convenience they offer. I have visions/dreams of building my own larger smoker from an old propane tank, but that will have to wait until I move out of the burbs.
I also love to hunt both big game and birds and have recently started making sausage out of mule deer, goose, elk and ducks that I have harvested. I love "closing the circle" on the animals I hunt by making them into delicious meals for my family and I certainly appreciate the new and different approaches to wild game I've found here.
Finally, I was recently in Jamaica and had some of the best jerk chicken and pork that I ever tasted. I will post some pictures of how they do it at that place we ate in Ochos Rios. I was truly amazed at the unique taste they were able to infuse both the chicken and pork with and am looking for ways to replicate that here at home. Yea, I know...good luck with that...right!
