Hello everyone, Jim here from central Wisconsin, or as my friends call me Smooch, which is my nickname from when I was younger. Been making and smoking vension sausage for probably 20 years with a homemade smoker my brother and I built. I just got a Masterbuilt MES 40 for christmas, which I've been toying with the idea for years now, just glad my son told my wife to buy me one for christmas, as she had no idea what else to get me. I've been wanting another smoker for a while now to do pulled pork, poultry, fish and what not, because I will not use my main smoker for anything but sausage. I have been lurking around here for a few days now and find this forum absolutely addicting and full of knowledge! Thanks to everyone for all the great info!
