Hey y'all, my name is Nate. I'm new to the forum but not to smoking/grilling. It is one of my favorite things to do with my buddies. I have cooked around 80lbs of pork shoulder using gas and some wood chips for a work place cookoff. There were 8 of us that entered just for fun. Most of the people preferred my style including the judges so I took 1st place. For the most part I enjoy smoking using strictly wood. I have access to all the hardwood I could ever need for free. My favorite to use is a half and half of hickory and apple. I have perfected my homemade dry rub and BBQ sauce that I think compliments pork very well. I am looking forward to learning new styles/techniques and trying to smoke some meats other than beef and pork.
