New way for me to use leftover sausage from the stuffer

I have always just fried up my sausage meat that ended up in the bottom of my stuffer. My fairly new 25# electric stuffer leaves quite a charge in the bottom and I thought I would try something different. I just did 12 #of jalapeno summer sausage and this was the meat was left over:

I flattened the meat out ,cut it in half and added some mozzarella cheese.

Rolled these babies up and added a rub to them .

Smoked for 2.5 hours at 225* with some cherry chips .

These little jobbies came out very tasty and hot as the rub was spicy and the leftover farce was jajapeno summer sausage.
