Live in the great USA, state of IL!!

I have been smoking meats, cheeses, and other items for about 2-3 years!

Wanting to expand my knowledge with others as I expand my concepts and ideas in the smoking world!

I was given a offset Chargiller smoker and have turned out some really good food. My pork shoulder is what I do best, but have started doing a few briskets and recently did a few briskets and turned into pastrami.

I love to make jerky, which now I make my own habanero sauce for. Trying branch out on flavors, but my bread and butter is a hickory/garlic medium flavor I have a good set of fans that like me to make them some when I make it for myself.

I like to hunt for deer and season and gun season is approaching and hope to make some summer sausage and other items out any deer I get this year!

I read a lot of forums for info on how to get better, so that is how I came across your site!!

Hope to make some good friends here as we share insights!
