Hello Kim and welcome to SMF and the wonderful world of smoked foods! I have an MES 40 and the first thing you need to do is check the actual cabinet temperature to the set temperature on the unit. They are usually off anywhere from 5*-20*, depending on the temperature you are smoking at.

SmokinHusker - I did sign up for Jeff's 5 day email class.  Thanks for the tip on checking the temperature.  Do you use the A-Maze-N Pellet Smoker?
