I'm from central MS. I've recently become addicted to making great bbq. At 43 years old, I very recently learned how to cook a really good steak at home. I can smoke chicken and ribs proficiently but I'm addicted to becoming great. I cook mostly on a Weber 26" kettle. I absolutely love this thing. I'm currently building a wooden smoker, 3ftx19"x22". I'm using a PID with thermocoupler, SSR, and double eye hotplate for heat and temp regulation. Everything is working correctly. All I have left to do is add the door. I'm anxious to see how well it works. I hope to be finished tomorrow. I can add pics later is anyone wants to see it.
