Well the new rig came in. I have to admit, I was so worried it was going to be gigantic but it's a perfect size. Got it all assembled last night, did the burn in then headed to local grocery store for something to put in it.

Wasnt much available so just grabbed a couple Santa Maria Style Tri Tips. Ran them at 225 for 2 to 2.5 hours, ramped to full for a quick sizzle. Sliced up and never made it to the plate. We hovered over the cutting board till full. Was surprised by the amount of ring (first time pellet user) and perfect smokey flavor for us. Some pics of it all below.
