And then, disaster struck.
Building had a power outage for several hours. Our PUD said it was planned, but they forgot to inform anyone in the building. Roast had only gotten to 157° when it happened. All I could do was wrap it in foil, place in a cooler, and hope for the best. Power came back on shortly before 9pm, but too late to put it back in the RT. It's in the fridge now, and I'll see what happened to it tonight.

I did a chuck a couple weeks ago .
Ran it on the pellet grill at 200 for around 6 hours . The IT was 157 ( no joke ) when I took it off and wrapped in foil , then in the fridge overnight .

Next morning it went into the crockpot on low , with beef broth and some garlic .
Around 7 hours .
Out of the crock ,

Shredded up , defat the broth and mix back in .

Time to eat . Fantastic . This was a test run , but will be the go to from now on .
thirdeye thirdeye got me doing pastrami smoked then instant pot finish ( he used a pressure cooker )
it was perfect , so I figured I'd try this with a chuck and a slow cooker .

If you " lost " your crock pot , use a dutch oven with a rack and some broth in a low oven .

The crockpot is a good idea, thanks! I'll just have to sift through about 30 boxes to find it.
Still no oven yet. Hopefully by Oct 10th the kitchen remodel should be done.

Ok, ruined smoked chuck roast has become a very good stew.

Next time I'll try something that doesn't take as long. As long as there are no more power outages.

Just damn that looks good! I could go for a bowl of that right now. Nice job on recovering from the circumstances.
 
Nice stew. Yeah not what you planned, but nice recovery.
Don't miss the power outages (planned and unplanned) after living in the Puget Sound region for over 16 years. Bought my gen set because of the unplanned events.
I haven't kept up on a lot of stuff for the past many weeks.

Well, I'm on the top 4th floor in a corner unit, so hopefully the smoke will just go up and away.
During the outage, a few of us gathered outside in the parking lot for beers and conversation. I found out that there is a guy on the 2nd floor who also makes his own bacon. Not sure what kind of rig he has.
