It’s been a while since I added anything of value, so thought I’d post up an update. I just took delivery of my first kamado style and selected the Kamado Joe Classic II, it’s just the wife and I most of the time. My MES40 and I quit talking mainly due to its inability to hold temps, I’m sure it’s the high limit puck.

Since I am in the learning curve for dialing temps I decided ribs would be a great trial cook. I got some St Louis style from HEB and covered them in Chuppacabra rub. Will spritz them in a couple hours and then on intervals until ready. Anyway thanks for looking and hopefully they taste great.
