Hey guys I'm new here. I'm active army from Memphis tn. Bbq is a passion I guess you would say. Right now I use a chargriller prof series offset. Atlesst until I retire in 2 yrs and custom built my brick pit and mobile pit. Anyway. Smoking so.e spare ribs tonight . Considering cutting them down to st Louis style and using the 3 2 1 method. Any way wish me luck and any tips are appreciated.
