Hey everybody I'm Kyle, a newbie from Southern Ontario. I've been interested in smoking for years and finally got myself a cheap smoker to start Learning the basics. I have a Masterchef propane smoker. So far I've only done pork ribs and they turned out pretty tough, I did them at 220 temp for 6 hours. Tasted great though. From what I've read I should definately get a proper digital oven thermometer. Thanks for taking the time to read and happy smoking everyone
 
Kyle, welcome to SMF!  Glad you are here and trying out the new smoker.  At 220F chamber temp, ribs could take closer to 7 hours to get tender.  You were almost there.  They'll be perfect next time!

Yep Ray is spot on, sounds like the ribs weren't cooked long enough.

I smoke mine to temp, not time.

We like ours at 195 IT.

If you like fall off the bone ribs then take them to 200-205.

Thanks AL I do like fall of the bone ribs, I will definately have to play around with a lower temp for a longer time
