hey guys, my name is john and I have been smoking for a few months now. It started when my inlaws got me a smoker attachment for my char griller bbq. And i will say this i dont think i have used the actual grill portion since then. I have mostly been smoking chickens and pork shoulders. Now i know i dont have the best smoker on the market and it has taken me several ruined meals to figure out my smoker. ( turns out they are a lot like women) anywho, I enjoy it a lot and usually smoke something every weekend and @ least one day during the week. I want to take on brisket but I am a tad bit nervous. I told my wife that for my birth day i would like a actual custom made smoker. Just not sure on the design or size. I know that seeming how i do a lot of hunting i would like a smoker big enough to fit a whole or even half pig on. well any tips or hints and if you know anyone in south florida that makes custom smokers i would great appreciate it. again smoke on

First off welcome John to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

http://www.smokingmeatforums.com/forum/list/127

then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview

here. So here's a link to a tutorial on how to post your Qview so we can see what your doing.

Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Oh yea there's no stupid questions we were all there in the beginning and we just really like to help others enjoy the fabulous smoked foods that we do. So again

Thanks guys for all the whats up's, I got some good ole rib plans for this weekends game, can't wait gonna be posting up some pics of the food and the fun. I have been trolling the archives pretty hard and I really think rather than buying a custom smoker i wanna tackle making my own. I have access to materials and tools and got some good buddies who know how to weld dam fine and will do it for a pulled pork sandwich and a beer. just curious as to where i would go about finding a propane tank or air compressor tank down here in south florida, not to many house runnin on propane heating systems or anything like that.
