Howdy, I'm Jack from Sugar Land, TX. OFT42 stands for Oil Field Trash.
I'm not new to smoking meat, just new to trying to do it well. I grill (steaks, burgers, etc) on a Weber Gas Grill and sometimes use a Weber, Kettle Grill when I want to use charcoal.
I bought a Traeger Lil Texas pellet smoker about a year ago and have had a good time experimenting with it. Funny thing is, I have not been totally pleased with anything I've cooked on it, yet I keep on trying. I've cooked a few briskets, spare and baby back ribs, pork butt, chicken and as I write this, I have a couple of small pork tenderloins smoking on the Traeger. (I had to have some pork to go with my New Years black-eyed peas)
I enjoy the "smoke flavor" of smoked meats and have found (for my taste) that my Traeger does not impart enough of a smokey-flavor that I seek. I bought a A-MAZE-N-TUBE-SMOKER and have had somewhat better results, but still not enough smoke for my taste. I've thought about about trying out some 100% hickory, apple wood, etc pellets, but just haven't done it yet.
I think I may have started rambling here on a thread where I am supposed to introduce my self. Sorry bout that.
Anyway, I look forward learning from the folks on this forum.
