Hello everyone from Illinois. New to the forum, but been smokin' for a while. Started years ago with homemade pit and separate burner to burn the wood to coals then transfer the coals to the pit. Lately have been using a Brinkman torpedo smoker with good results. But, just upgraded to a Rec Tec 680 Pellet Smoker. I am looking forward to expanding my horizons with this new smoker.

Big Jim, welcome to SMF! Roll Call is usually where folks first post, but this works too.

Glad you're here with the experience and the new pellet smoker. Be sure to post some pics of the deliciousity you smoke on the new smoker.

Hey, what is a Brinkmann Torpedo smoker? like an offset smoker? or like my rocket?

Hey Johnny B, no offense intended. I have smoked pounds and pounds of pork shoulder, ribs and brisket. I loved it and have two of them. I just wanted to move up to something a little roomier and that doesn't have to be babysat so much. Smoke On!!

Lol.. just messing with the sad face..
I did the mods for my Brinkmann and added a few new tricks to enable my smokes to go up to 15 hours on a load of charcoal. I shake the ash a couple times over that period.. I get to go about 6 hours holding a steady temp plus or minus 5 ° between the interruptions. Not much effort required with my ECB use. It's all good.. I know what your saying.. hehe.. cool.. Have fun!
