Good afternoon all. I am new to this smoker build thing and need a bit of advice. I recently aquired a standup commercial deepfreeze from a restaurant with a shot compressor. It has 4 doors about 1.5 ftx1.5ft per door. with a completely open inside. All stainless inside and out. Its about the size of a fridge, just a little wider. I thought It would make a great smoker. I was planning on separating it in half for two smoking chambers. One for a colder smoke, and one for a hot smoke. Here is my only dilema. The inside of the doors and around the door openings on the inside is a hard plastic. Should I replace it with something like more steel, or would it be ok? Everytihing else inside and out is all stainless. I would put a pic of it on here if I could figure out how to.

Two choices, replace the plastic with steel, or sell it to me.

I'm looking for a large commercial freezer for another build.

What makes em so good is the stainless plus insulated. Really simple to hold temps for long smokes.
 
We, thanks all for being welcoming and for the advice. Should I replace it with steel, or can I budgetize with a certain wood, or is wood not a good idea? Here are some pics anyways. Sorry, this is the beginning stage of the build with doors off and compressor removed.         Any other suggestions for it?

Hey kuch, Did u have to remove the insuation? I have 2 com refers I mwas going 2 convert and I dont want 2 make anyone sick as I cater a few gigs for friends. Thanks
