I make my own hot sauce but still can't help buying small batch stuff from local vendors when I'm out and about.
We are coming into Spring in Downside Up Land and I'm about to go nuts planting Chili seedlings and see what happens.
But for relevance fellas Franks, Tabasco, El Yucatan, and a few others are on the Supermarket shelves here along with some pretty good Aussie vendors you might like if they make it over there.
Plus, when I travel to Asia, there's another whole world of hot sauce, both commercial and small batch that will melt your face off.
This informs me on what to do with what I have. I have 2 jars of Trinidad Scorpions in the fridge which I fermented for a while and they are now in the fridge while I work out what to do with this as a donor to a flavorsome hot sauce.
I might make one small bottle of really F'ing Hot sauce.
