Hi All,

My name is Nico and I have just joined your blog.

I live in South Africa where "back-yard" smoking is not quite as big in the US of A and I would like to hear and see from you guys and girls (?) on how to first of all design and build a manageable smoker-cooker and then try some of the lip-smacking recopies that I have seen on the website.

Welcome to the group Nico!  You've found a great place to share ideas on all things smoked, cured, grilled, etc.  There are plenty of good people here who really know their stuff and genuinely enjoy helping one another.  Looking forward to your input around here, and just ask when you need anything...someone will surely have the answer.

Hi Matthew, Thanks for the welcome note...I live in Alberton and I think you say that you will be building a smoker soon...I have been thinking about a project like that myself but csnnot get hold of a plan for the "ultimate" smoker. My aim is to smoke a Brisket "low and slow" but it seems to me that the butchers up here are extremely reluctant to sell the complete brisket...if you have a good plan for a smoker..don't hog it...please....;-)

Hi and thanks Gary....yes..this is new teretory to me and I might not ever master it but I sure am going to give it a good try.

In South Africa as in America, barbequeing is a very favourite passtime although I see and hear that it is actually a very big business in the USA.

I have been using a very small and basic smoker for the past 100 years or so but would like to build a backyard smoker in which I can smoke a brisket or a pork-butt for some good pull-pork or b sandwiches....and knock the socks of all my neighbours, friends and family.

Looking at all the diffirent styles and models of smokers availiable on the net, it is actually very difficult to find the "right" plan...but I will not give up....and I am sure that you guys won't let me

Hi Nico

Like you, at this point, I'm still doing some research. I have spoken to my friends in the US who smoke and frankly, there isn't really an ultimate smoker, but rather one that allows you to control the heat as it does vary. I used to often frequent a place in Ft Lauderdale called Tom Jenkins (on the web) and they have an open smoker with many racks in their kitchen. Whenre I am with my project is do I build one in, with braai and wood burning oven included (bread & pizza) or do I build a portable unit that I can take to the various fairs/markets/events as I'm sure you can sell bbq rolls and make some extra cash. What I might end up doing is building one at home and then doing all the smoking there and maybe do some simple finishing at the fairs. Smoking properly takes constant attention to keep the smoker at the correct temperature, so it's a bit of an all night thing.

Amazing how people from different places in the world have similar ideas and visions....some people in South Africa is under the impression that barbecuing was invented and perfected here but I am sure that we can learn some stuff from you guys in the USA....and vica versa.

Looking on the Internet it seems that it is u multi million dollar business in the USA....not so big here but hey....a good piece of well marbled rib-eye steak is a good piece of steak...here or in the USA.

Thank you for the welcome note and the websites...once again..a lot of information to be analyzed but I am sure that I will be able to formulate a plan to build the "best" smoker for me.

Everybody has his..or her idea regarding smokers but I am sure that if you look at the "big picture" ail smoked meats have their particular good and tasty points...and down sides...(how to get your wife to clean the smoker...hehehe).

I will certainly be on the lookout for the plan/idea that will suit me and my situation and will build it...and use it extensively.
