Good afternoon. I’m a retired butcher and live about 100 km sw of Melbourne. This is my first smoker , although I have another 4 bbq’s. I have 3 gassers and a weber GA The only reason that I bought this smoker is that it had a couple of small dents in it and it was reduced from $150 down to $20. On the weekend I decided to give it a go and bought some beef ribs. They tasted great but fell apart so I went to Dr Google and came across this forum. I realize now that I over cooked them. I’ve seen some smoked prawns with a peanut dip on this forum, so they are my next experiment.

Thanks everyone for the welcome. I will probably be doing a lot of reading and hopefully learning , instead of posting. Today’s plan is to try the prawns ( shrimp) and the peanut dipping sauce that I saw on this forum. Thanks to the OP that put that up.

A quick picture of my $20 smoker. I’ve only done 3 cooks on it. Beef ribs , prawns ( shrimp) and muscles. The minister of finance gave me the big thumbs up and said we will look around for a bigger and better one. This one she christened R2D2. I think it was the peanut dipping sauce that won her heart.

that a great starter. I had a 14 inch WSM for years before switching to a pellet smoker.
