Hello everyone! Just bought a Char-Grill smoker and gonna try it out tomorrow! I have a full rack of of pork spare ribs rubbed up and ready for tomorrow. Gonna use apple and some hickory chips. Im so excited and cant wait to taste my results! This is a awesome site and so glad I found u guys and joined up! Everyone wish me luck!

Hello Bullitt and welcome to SMF! Sounds like you are rearing to go! Try the 3-2-1 method on those ribs, and then after you taste them you can decide if you need to modify the method. I did my first couple of rib smokes using 3-2-1, but I've now modified it to 3 - 2(2.5) - .5 and they are right where we like them!
