Hey guys. I've been reading all your fatty posts for a while now, and finally tried it yesterday.  Thanks for all the info.

First impression: It was a lot smaller than I thought it would be.  It looked a lot bigger on the internet.  [insert dirty joke here]

I made a very simple breakfast fatty, didn't use any sort of rub/sauce.  I think I'll have to add some sort of rub next time.  Anyone have any ideas?

It's filled with potato, onion, and cheese.  I smoked it on my Egg at 250-275 for 2 hours, then upped the temp to 350ish to make the bacon crispier.  I had a temp probe in the meat, but think I'll skip that next time, the interior cooked really fast, way before the bacon was crispy enough.

 Yep the 1 lb chub made into a fatty does look small. I use 1.5 lbs for mine and it makes it a bit larger in diameter and thicker sides so less chance of it splitting apart.

Thanks.  I have some 2lb chubs of sausage in the freezer, so perhaps I'll try using those, with a 1/4 of it left over.  

Do you guys have any tips on rubs/sauces for a breakfast fatty like this?  

I served it like this:

Sunny side up egg on top of fatty.

Slice of fatty on top of toast

Toast on bottom

I should have taken a picture of that.
