In preperation for my first ever smoke on Saturday I would love to try these. How do you get it from the flat meat into the loaf? Do you roll it or what?
 
Yes, I use wax paper sprayed with Pam. When you're ready to roll it, just roll the wax paper and peel it off, then you can pinch your seams and smoosh in the ends.
 
I'll have to try the pam next time. Some put it back in the fridge for an hour or so after you flatten it, but I usually don't have that much time.
