Brisket was not on the menu for my daughters bday party, but when I walked by a beautiful 10lb USDA Prime packer that Fairway incorrectly priced and stickered as Choice, I couldn't pass it up..  Fired up the Yoder Cheyenne, 250deg, hickory splits, rubbed with just salt and pepper and tossed it on friday night 5:30 pm

3 HR Mark...


6 HRs in..


Hit stall at 152 IT,after 7 1/2 hrs, being I had so much to do the next day for the party,I wrapped in butcher paper and finished in the oven at 250..  12 HRs total cook time, timer went off at 5:30am 203 IT… transferred to warming drawer set at 150 deg to hold till party..


Final results were outstanding..great bark, extremely moist, and tender!! Couldn't of been happier, guests loved it..

no pics of the slicing, but snapped a few before it was all gone..

Nice smoke. Great bark. Lots of pepper in the rub. You sure there wan't a Texan around somewhere helping with that? And your first! Points.
