This is my first time ever smoking ribs.  Hope you all enjoy looking at my process.  Tonight I got the ribs ready and put a rub on them and they are setting in my fridge as I am typing.  Here is a little tease.  The finish product will be put up tomorrow night!!

I plan on using the 2-2-1 method and smoking at 220-230 does that sound ok or does it need to be modified.

If you want to crisp them up a bit raise your smoker temp to about 275-300 for the last 1/2 to 3/4 hour or so?. That's how I do mine but I like my final saucing to carmalized and to have a bit of char on the pull back.

Anyway you do them they are going to be delicious

Good luck

1 hour in added some chips and took a pic.... Hope my wife took my hint about the AMNPS for chirstmas

me neither just thought Ive heard of people eating ribs with pickles so y not try some?    I used it on the smaller half in case its a flop...

pickle juice tasted pretty good didn't notice a sour flavor or nothing in the ribs just nice and juicy!

Pickle Juice... Interesting...Vinegar, Salt, Sugar, Garlic, Herbs and Spices...Sounds like a good, "I Need IT Right Now!" option...Great thinking in a pinch, J!...JJ
