Not sure how it will cook on abt since it cooks differently but will find out tomorrow. Well done.
It will cook a bit faster than store bacon being lower moisture. Can get tough if cooked too long. I just leave a little extra crunch texture on the Japs and pull when the bacon is done.

Costco had a bunch and I went through everyone of them. One of the quarters was really fatty. Didn't shoot that one sliced, lol. Gonna be good mixed in with some smoked meatloaf patties and added to a big ol pot of Collards.

I get mine from costco as well. I try to pick the meaty ones, but it's really hard to tell with them. I do save the bacon ends for cooking with. I add them to chili, beef stew, meatballs, or whatever else I want to add a bit of smokey flavour too.

I tend to cook my bacon on a cookie sheet in the oven. Seems to give a more even crisp across the slice. After I take the bacon off, I'll put a coffee filter over a mason jar and strain the fat to save it for when I'm frying eggs or making hash-browns. Really don't want to waste a precious drop of the fat. It's pure bacon flavoured gold!
