hello all!

so we do a yearly 4th of july bbq at my mom's place in Williston, Florida (for the past 10 years or so). This year it fell on a wednesday so we decided to move it to the saturday after, this saturday!

this is a live action posted so check back for updates :)

The Menu

- Pulled Smoked Chicken (6)

- Wicked Baked Beans

- Boiled Peanuts

I'm going to inject the chickens with Scottie's Creole Butter recipe that has been posted on the forum a few times. I made this up this morning and it's sitting pretty in the fridge. I plan to inject friday night or saturday morning. When i finish the chickens i'm gonna pull them and cover in a chipotle vinegar bbq sauce i saw on the Food Network's Sandwich King.

hey guys,

sorry for the delay...being out in the boonies at my mom's house pretty much killed any Internet connectivity.

here we go....rain, mosquitoes, and humidity made the day a little miserable but food came out great!

making  up the Chipotle Vinegar BBQ Sauce to mix in with the cooked chicken (recipe called for a actual chipotle pepper but all i had was powder and local stores didn't have peppers, didnt have a strong chipotle flavor so i probably should have used more then just a TBS)

Got the Boiled Peanuts going at 10pm friday night (Spicy on left and Regular on right). by 1pm they were good and flavorful!

6 chickens injected with the homemade cajun butter! didn't rub them just neked! also left room for the smoked backed beans on the top shelf

They were done in about 4 hours smoked at ~260. Wrapped in foil for 30 mins..had to unwrap a couple early for a picture and to get the house smelling nice and good :)

ended up with 3 chickens that didn't need to be chopped up...gave 2 away and kept one that i'll cut up and use for other meals and use the carcase for broth!

looks great    I would love some info on the boiled peanuts in a crock pot,    I've tried em in a pot a couple times without much sucess,  everytime i drive up to GA first thing i do when crossing the border is pick up a bag.

MiamiRick - Here is what i do...soak the raw peanuts in a big bowl (~3lbs) for 24 hours, i usually put a plate and something heavy on top to apply pressure and keep them submerged. Once you've done that you that throw them in the crock with 1/4-1/2cup salt depending on how salty you want them (if your making a non-spiced version i would suggest more salt as you want flavor) and set on low. within the first hour as it heats up stir the mix the salt around. i also put about 5-6 jalapeno and serano peppers, 2-3tbs of everglades heat, and about 1tbs of Slap Ya Mama in the spicy one.

let cook for atleast 12 hours but you can go longer depending on how soft you want them. after about 10 hours try one..the shells can be deceiving you, you might thinkt hey are still hard but the fruit inside should start getting soft. make sure you stir to mix up the flavors and make sure the top ones get to the bottom to be submerged, every few hours or so

those road side guys boil there for more then 24 hours i'd assume because the shells are super soggy.
 
I love Boiled Peanuts.....I do mine old school.  I get "green peanuts"....have to do them with green...or they don't taste right to my South Alabama roots.  I put them in a huge gumbo (stock) pot.  Fill the thing up with water and add either rock salt (yes---the kind you use for homemade ice cream) to the mix.  Add more than you think you will need because the shells will absorb some of the salt...you want the meats to do that too.  I boil them for at least 8-12 hours....and a nice simmer/boil.  Test them closer to the 8 hour time...if the meats are soft...you are good to go!  (Love the little soggy ones too)  They also can be frozen for later in the year.
 
i love going up to my mom's house in n. florida because she is in peanut country! during season i can get raw/green peanuts for .99/lb!
