Screaming hot gas grill. Hotter than the 700° will read.
Burnt the mavrick probe up. Going to have to wing it. this is the fat side. about 1 min
fat side rplaced probe after i removed from heat. 133°
other side
after the rest sliced
THIS IS THE MONEY SHOT
not bad for a mule.

But you sliced with the grain!!! Tri tip foul!!!!!
Zoomed in, it looks cross grain from here.
I could be wrong--I never did Tri Tip.

That is infact on the 1/4 grain (a little less) and I'm going to do it to the next one too!
