For me, I wrapped 1/2" - 3/4" slices of sweet onions (two rings) with a bacon slice, secured with toothpick and smoked. Pretty darn tasty on a burger, later that day. Have teriyaki pork in smoker right now for jerky.
Possum. Did it on a dare one night while we had the smoker going.
Cleaned it, slathered with EVOO, rubbed with SPOG, put it in the smoker, let it go until we thought it was done. All of us had some, and from what I remember, there's a good reason why I haven't done it again.
We were doing an all night brisket cook and some adult beverages were involved.
That's enough to make one stop drinking!
You got to put him for a couple of weeks and feed him good clean stuff like sweet taters , chicken strips and such.Possum. Did it on a dare one night while we had the smoker going.

LMAO!!!Well, no telling what this critter had been eating.... He showed up around the camp and wouldn't leave, so he was dispatched. Someone said "waste not want not", then another said, "let's smoke it"... The rest is history. I'll pass on seconds!
