Between the neighbors and the inlaws asking for potato sausage, I ran out! So, since we are going next door tonight with the weisswurst, I went ahead and made some more Swedish potato sausage. 15.6 pounds after stuffing.

Pork and potatoes ground, the shot with the beef didn't save for some reason.

All mixed up and ready to stuff. I did something different for this batch, instead of grinding the onions, I hand chopped them. Gives a really nice crunch and the onion flavor is a bit more pronounced.

Would you like to share the whole recipe with us? I absolutely love potato sausage but haven't had it in years.

These are fresh sausages that are cooked in simmering water. The best way I've found to do it is to place the link(s) in a pan, add about 1/4-1/2" of water, bring to a simmer, cover and let them simmer along for about 30 minutes. You can also use a good homemade beef or pork stock to simmer in.

 Beautiful, I can't wait too get home in a month or so, Going to try making some sausage for Opa when I get there, Actually I think I am going to get him to come and help.....

Sorry folks, I missed the request.

Swedish potato sausage

4 pounds ground pork butt
4 pounds peeled potatoes
3 pounds ground chuck
1 pound white onion

72 grams kosher salt
30 grams white pepper ground fine
10 grams all spice ground fine
300 ml water

Boil potatoes until almost soft, then rinse in cold water until cool.
Mix the spices into the water very well
Grind all meats through course plate and then mix in the spiced water
Grind the potatoes and onions together and then mix into the meat
Mix until very sticky
Stuff into hog casings

To cook, low simmer for around 30 minutes or grill until the IT is 160 degrees. Serve with lingonberry preserves if you can find them. Cranberry sauce works if you have to.

This sausage is BUTT UGLY when cooked, but it tastes amazing!
