Cannot get enough of cold smoking cheese. Buying all Tod's pellets and cheese that will break me. Ha. Got some Mozzeralla-2. Did one couple days before along with  a few others.


Here is todays. 2 mozzarella, Jalapeno string cheese, muenster, pepper jack and mild cheddar. Been doing xtra sharp and as posted before had a hard time figurine it out, good though, just in my opinion don't need to do extra sharp to begin with. Did mild yhis time and will not open for awhile.


Well all done on pitmasters. Here are my notes. Ambientat 9:45- 40. box is the same, where cheese is. !0:45 51 ambient and box is 62. 11:45 51 ambient and sunny, box is 90. Put 3 jugs of ice and old lined tablecloth with canvas over that and 10 min. later is 68 in box. Took string cheese off at 2hrs. Wife tried and liked. Tasted myself and was ok. 3:15 box at 71 ambient 56. Took cheese off at 3:45  Amnps was still going at 1 and 1/4 rows. Think I am getting 4 hrs per row on 6x8.  Do at night mostly or am not at  home xcept today for jury dut and it just rounded the sorner and 5 hrs!
 
No just brought em in to quit sweatin in that. Soon as they did, couple hrs, vac sealed em.  By sweating I mean they seemed greasy feelin. Never had that happen in this the 4th cheese smoke. Oh I did wipe them at first.  Going to be cold and big snow storm yhis weekend. Gotta do more. Might treat myself to some expensive stuff, like blueberry or strawberry cheese. Gotta get the wife going stronger on this.
 
FIVE HOURS! You are pretty Hardcore on smokey cheese. Last smoke was 2 hours with PMC and that was too strong for my taste and I like Smoke...Nice color on that cheese...JJ
 
Yea, but have done it before and after 2 to 3 weeks taste greeeeat!. Wait a month to taste and you will  wanna keep doing it. Have never heard any negative. The colder it is the more hrs. I have smoked. Been taking notes, so we will see. Sttart another post later on notes, temps, cheese and all. This is 1st for me but everybody that has ate what I have done has loved it.  Got some farmers and muenster on pitmasters to crack open for Easter.
