Mom was coming over for her Birthday dinner so I thought a smoked Prime Rib would be just the ticket.

8am Prep Work
Started with a 4.5# bone-in Prime Rib roast. Separated the bones, trimmed the fat, and tied her up nice and tight. Seasoned with SPOG then set back into the fridge for a few hours.

11:20am The Cook Begins

Exterior temp was 40 and pouring rain. Dragged the patio umbrella over to cover the smoker, and then fired her up. KBB and hickory chunks, she was up to temp with a nice light smoke in about 30 mins. Threw on the Prime Rib, beef ribs, and trimmed fat on the smoker. Smoker Temp settled in nicely right around 230.

2pm Making the smoky Au Jus & Beef Rib Burnt Ends

Rotated the roast then pulled the fat and ribs off to make some smoky Au Jus. Rendered the fat down in a stainless steel skillet then removed and hard seared the Rib section in the beef fat. Removed the ribs and sautéed two small white onions, 5 celery stalks , and cup of baby carrots that had been cut into chunks. Cut the Rib meat off then returned the bones into the skillet. Sautéed for another 15 minutes then added 1 can low sodium beef broth and 1 can of water. Brought to a boil and added 1tsp garlic powder, 1tsp rosemary, and 2 tsp Worcester sauce. Covered reduced heat to low and let simmer for 45 minutes. Took removed Rib meat dusted with Red Neck rub and sweet baby rays BBQ sauce then put into a foil pan and back into the smoker for some Beef Rib Burnt Ends

3pm Drained and separated the Au Jus and solids. Added 1tsp of salt, fresh black pepper then let simmer.

3:50pm The cook is completed
Pulled the Rib Burnt Ends and roast when IT hit 135. Let the roast rest for 20 mins as we finished getting together the rest of dinner, baked potatoes and fresh green beans.

Perfect medium rare, edge to edge.

Everything came out great. And the beef Rib Burnt Ends were a huge hit!
