Midweek meal - Grilled chicken salads

Nothing special here. Got home late last night and it was either cook something fairly quick or eat leftover pizza. Kids opted for pizza...I opted to cook something.

This has been the extent of me grilling/smoking over the last couple weeks since I got back from vacation. Between work, high school football games, elementary school fall festivals, lawnmower problems, etc...haven't had much time to fire up the grill/smoker.

Pack of boneless skinless chicken breast filets. Threw them in a marinade of Italian dressing, low sodium dales, minced garlic, and cracked black pepper for about 45 minutes.

Fired the grill to about 450ish and tossed them on. Yes I know I need to clean my grill!

Put them on the top rack to finish up with the remainder of the marinade on the top.

Pulled those off and chopped up some veggies. Tomatoes, cucumbers, and some green onion I had in the fridge.

And the plated shot with some feta cheese on top.

Hell of a lot better than leftover pizza IMO! Not bad for a quick mid-week meal when you don't have much time to prepare or get something going. Thanks for looking!

I don't think I would have put the rest of the marinade on after being on raw chicken.
 
It looks awesome John!!! I’m in the same boat, haven’t had much time to fire up the smoker but for different reasons than yours....so it’s been quick grilled meals like these.

That beats leftover pizza any day, your kids end up eating it too?

Thanks Joe. Yeah the kids are actually pretty good about eating salads and stuff...even my picky 6 year old daughter who I cant get to eat much besides pizza, chicken nuggets, and grilled cheese will eat some. But if you present pizza to them instead of something somewhat healthy you know which direction they are going to go!
 
That salad looks very tasty. My wife eats a pretty close replica of that salad almost nightly lol. I just restocked with another 40 lbs. case of boneless skinless breast at the butcher when it hit $1.05 / lbs.

Man that's a great deal. If I could find them for that cheap I would buy a 40 lb case too. My wife does pretty much the same. Gotta keep about a gallon of greek yogurt ranch dressing on tap

Love salad with smoked chicken. I haven't smoked a bird in a couple months but thought about doing a turkey in prep for thanksgiving. Running $.99 lb this week!

You know that sounds really good. I'll have to check out the grocers flyer and see if anyone has turkey on sale. Post Turkey-day we can pick them up on the cheap, last I checked they were still on the high side.
