This was my first attempt at spare ribs and it was mostly because the grocery store only had frozen baby back's and I was looking to smoke that day. Needless to say, I think I'll be sticking with the spare ribs.
Rubbed one half with mustard and a generic pork rub, and the other half with just the rub. Smoked @225 for a little over 5 hours. I had issues with my MES30 not producing smoke @225 so I had to keep bumping the temp up to get the chips to catch fire and smoke.
These came out with incredible flavor. I liked the mustard base but It seemed to make the rub not bark as much and was more of a "mush". It might have been because that half was directly below the other rack so it was catching a lot of drippings. Can anyone tell me what might have happened there?
