I smoked up a meatloaf this afternoon.
1 lb ground pork, 1 lb ground beef.
I chopped up 1/2 sweet pepper, 1/2 jalapeno, some mushrooms and a green onion and mixed with 2 eggs and some bread crumbs. The veggies add moisture to meatloaf
It went in the MES for 3 hours at 250F using hickory.
Smoked potatoes that had been coated with salt. Strange, they are NOT salty and have softened up.

Made a batch of bbq sauce. The bbq sauce is 1/4 cup each of whiskey, brown sugar, balsamic vinegar and chili sauce. I added 1 1/2 TBSP of tomato paste. That thickened it up nicely. Heted it for about 15 minutes.

Tasty!!!!!

Oh by the way, the high for the day was mid teens Fahrenheit before wind.

Looks like a great meal.

Any particular whiskey for your BBQ sauce? Wondered if you found any difference in flavor profile between whiskeys. (Only bourbon in my house.)
 
Great looking loaf. Smoking it is the only way its allowed to be cooked in my house anymore.

Smoke baked potatoes. Interesting. I'll have to give that a go next time I do a meatloaf.
