Your post reminded me that I had some meat loaf vac sealed in portions, in the freezer, from the last one I smoked and am getting it thawed out now.

I have been making a second loaf to slice and freeze for awhile now.

Smoked meatloaf changed my life. One of the most simple, most basic of smokes. And one of the most delicious. My first few were store bought from Publix.

I don't buy them anymore because the last few were over-mixed leading to a tough, dense, chewy texture, but it's now the ONLY way I'll do home-made now.

thx all. it wasnt the regular egg cracker mix normally thought of. this one was pretty much just a big seasoned angus chuck burger. lol nice and lean like i like it. i cant do greasy meat loafs. barf my summer sausage is extra lean too. cant stand those store logs that coat teeth and tongue with grease.

i like that comment "smoked meatloaf changed my life"! still chuckling

That looks awesome! I bought a couple lbs of ground beef to make sloppy joes today, but this might change things. If the snow melts off and the yard isn't too swampy I might fire up a smoker.....
