While I am smoking my ham, might as well do some sticks.

Tex Mex with cheese and Owens BBQ honey BBQ.

Then all vac sealed back up.

85/15 beef with 16mm collegen casings.

I've been doing the same as you, using high temp cheese.
I have been wondering if regular hard cheddar would work, without melting.
It would probably be a pain to cut up into little cubes, but I was thinking if I set my meat slicer on the thickest setting & sliced the block up, then it would be real easy to make small cubes with a chef's knife from the slices.
Have you ever tried it?

Stuffed into 16mm casings. I have to unravel to get them to fit my tube .

5 lb of 16mm makes alot of sticks. I hung them on my bacon hangers to get them all to fit.

Cooled in the basement overnight , then in the fridge till tonight. Going to try to peel the casing off.
