Is there other document/manuals like Herbert W Ockerman's Sausage and Processed Meat Formulations?
I've been looking for many years now for a recipe for mock chicken loaf that was my favourite sandwich meat since I was a kid back in the 40s-50s and haven't been able to find it. It is still made by a few companies like Olymel.
I thought maybe if I found other manuals like H W Ockerman's I might find what I'm looking for.
All I need is the list of spices used to give it the taste it has.
 
Thank you for your reply. However, I'm looking for what has been a commercial product not a home recipe that started back in the wars of the 1900s as an alternative for what was very expensive back then, chicken.
 
Thank you for your reply. However, I'm looking for a manual meant for commercial production as it's unlikely to be found in ones meant for home production. Also, I don't have the funds to buy on speculation unless I know the proper recipe will be in it.
It would most likely be in a commercial product manual like Ockerman's that deals with all processed meats more than a book primarily on sausages.
It's a long shot that I'll ever find it but I'm getting short on time to do so as I'll be 82 next month.
 
Commercial is in all likelihood proprietary and not in the public library.
I was hoping that other manuals have made it in circulation like Okerman's did here.
 
I’d love to read about what they used for cooking back in those days.
And thanks for the recipe - I want to try it this weekend. Unfortunately, I’ve run into an annoying problem. My saved recipes in PDF format have stopped opening. Now, to view the recipes, I have to convert them to another format using PDF Converter https://pdfguru.com/azw3-to-pdf until I figure out what’s wrong. I think it might be something with my software, since I recently had Windows reinstalled. Maybe someone has faced a similar issue.
