Well, I finally made the venison hot sticks without drying them out, I thought i would share a picture of how they look. Thank you everyone for giving me some much needed advice.
I have some questions about making stix. What sized casings do you use? Looking at the Butcher & Packer website, it looks like I should use the 21mm collagen casings. Is that what everyone else is using?
What sized tube is needed for these casings? The smallest tube for my stuffer is 1/2" and I'm worried about them fitting on the tube.
Should I use the clear or the mahogany? I see that the stix pics posted on the 1st entry in this tread that they have a beautiful mahogany-like color, but I wasn't sure if that was the color of the casing, or due to the meat and the smoke.
