Mac n cheese for 50....Help.

Doing mac n cheese for 50 this Saturday. Took my regular recipe x 6. My question is do I need to make my sauce/roux in small batchs or can I do it all at once in a large stock pot, thx. Just put 2 1/2 trays of beans in the smoker, to be reheated at the party.
 
With Bechemel/Cheese Sauce, 1 Quart or 1 Gallon makes no difference. Make a large batch, just be careful not to scorch the milk. Placing your pot on a Heat Diffuser helps a lot. I put my sauce pot in a Cast Iron Pan to diffuse and even out the burners heat...JJ
