I just bought my first dedicated smoker, Traeger BBQ070 classic. I have already tried multiple types of meats and have been very pleased with the results. Now I want to perfect my craft and learn the secrets of the meat! HA.
This weekend I am going to try to smoke an 8-lbs boston butt, and a 6 lbs tenderloin somewhat simultaneously. I think i need about 12-14 hours for the for the butt (195 degrees IT) and maybe 3-4 hours for the loin (145 degrees IT)??? Someone please confirm if I am close on these numbers. I have a bunch of friends coming over and want to make sure I have my times right so everyone can eat as planned. The butt is going to get some EVOO with a garlic and salt rub over it. The Loin is going to get EVOO with a sweet applewood rub. I am going to try hickory pellets with a mix of some cherry as well just to see what happens????
I am excited to sit back and see what all of you pit masters have to say. Thanks in advance all for taking the time to confirm my plan or give me more tips as to what I should do.
