Cherry Chipotle BBQ Sauce

Started with a 2.5 pound bag of fresh cherries.

Pitted 2 cups (about 50 cherries)

The Cherries, Chipotle Peppers in Adobo, Orange Juice, Apple Cider Vinegar, Sugar, Kosher Salt, Bourbon and Honey (not pictured)

Start by throwing everyone in the pool except the Honey.

Simmer for about 15 minutes.

Put mixture in blender and blend until smooth. (Remember this is hot!)

Back into the pool and this time the Honey is added.

Simmer for another 15 minutes until nice and thick and reduced.

For this recipe I wanted to put it into squirt bottles, so I took the extra step of straining it to remove all the seeds and big chunks. This isn't needed for brushing on the sauce etc.

Made 16 ounces of Sauce after straining.

2 cups pitted cherries
1 cup orange juice
1/4 cup bourbon
1/4 cup apple cider vinegar
1 tablespoon sugar
1 7.5 ounce can Chipotles in Adobo Sauce
1/4 teaspoon kosher salt
1 tablespoon honey

Simmer all ingredients except honey in a saucepan for 15 minutes.

Pour sauce into blender until smooth.

Return sauce to sauce pan and add honey, simmering for another 15 minutes.

Strain for a smoother sauce or leave as is for a thicker sauce.

Can use fresh or frozen (thawed) cherries.
Can use fresh or bottled orange juice.
Can use you choice of bourbon/whiskey.
