Thought I would try something new today, so I decided to smoke some Jamaican jerk chicken wings on my WSM.

I started out rubbing down some whole chicken wings with some authentic jerk seasoning.


If you really like jerk chicken and have never tried this seasoning you have got to give it a try. I buy it on amazon for a really good price, It is imported from Jamaica, so it is the real deal. They make it in mild and hot and spicy


I let them marinate for 24 hrs.


Lit some Royal oak and letting the WSM get up to temp (about 275)


To get the authentic taste of jerk chicken you have to use pimento wood. Its

kind of expensive but well worth it.


I let the pimento wood start smoking real good then threw the wings on for about 2.5 hrs.


The finished product was just as good as they looked. They was a little to spicy for my wife

but she still said they was some of the best wings I've made yet. Thanks for looking fellas.

Looks mighty tasty!! One way I have found to mellow out spicy food is by drinking a cold beer! I am going to add these to my "to do" list.
 
Great find on the pimento wood.  When I went to Jamaica I learned about that wood, but can't find any around here.  One of these days I'll search the internet enough and pay the shipping for some.  Looks great!
