Kitchen/poultry sheers&knives

The amount of knives and kitchen scissors ive gone through i could melt and build a small car. Ive had a bunch of brands, esp knives and my cuisinart chef knife from tjmaxx for $10 has outlasted even my $400 messermeister from solingen germany. Its got a solid backbone and full handle tang, must haves in any knife you want to last.

I can also speak to henkle. They seem be jekyl and hide, some ive had lose an edge faster than anything but a gift of one last year has been holding up well. In my opionion though henkle is overpriced and unreliable. Victorinox has been decent, but dont discount dept store brands either. If its got a solid backbone theres enough metal to sharpen for years.

As far as kitchen shears, OMG these things are all garbage and become useless the first time you cut a backbone! Then i found lamson and for a year now of use they still will cut everything.

I do alot, alot of cooking and usually buy bone in meats to save money and do my own butchering. My favorite knife , benchmade meatcrafter was a gift a few years ago. That thing tears through everything, but i dont touch bone with it.

Thanks. Great info. I totally get sometimes more expensive isn’t always better. Sometimes cheap is awesome. I have plenty of Snapon overpriced tools and I have some great Harbor Freight stuff. My daughter bought me the german brand knife for my bday. I got to check them shears out. Thanks
