Shout out to Kilo Charlie for the recipe. I've made these a few times in different ways, and I'm convinced air-fryer is the way to go. This was an 8-pack of wings from Costco; tossed the package, so not sure how much that is by weight. Taking them now to share with friends at my local pub.

Pretty simple to do.
Soak wings in Sake for 10-30 minutes, your preference. The alcohol will help dry out the skin.
Pat dry on paper towels, and sprinkle generously with kosher salt and ground black pepper. Cook in air fryer 20 minutes at 400°. Remove and sprinkle with Shichimi Togarashi seasoning (Japanese 7 spice powder.)
