That looks great, Red! I just ordered some hi temp cheese & now it looks like I didn't need to.
How was it ground? That looks almost like an Anduille grind/mix.
Sure looks better than my first try...

Dan, meat was cubed in about 1 1/2" pieces than put in freezer for two hours, single grind using 3/8" plate.
