Joe, try the Kapusniak with the Pork Ribs some time. My family makes Spare Ribs and Sauerkraut with Potato Kluski. The the Pork and Sauerkraut is simmered for hours until the Pork falls off the bones. With all that cooking the Sauerkraut gets tender and very mellow with a slight sweetness. I suspect the Sauerkraut here would yield a similar tasty result...JJ

Thanks JJ, I wanted to but didn’t due to time constraints. I had a package of rib tips in the freezer I would have liked to up but didn’t think that far ahead.
 
Looks absolutely delicious.I have some kraut simmering with some smoked pork loin I did last weekend in the slow cooker right now.I am gonna try this soup next time around.

Thanks Robert, pork and sauerkraut is always a New Years Day dinner for us. Don’t know why we don’t eat it more often, it brings good luck right?
