Whew finally broke a 66-day weight loss plateau. Went to the farmer's market and saw fresh figs. Couldn't resist. Decided to make the following, a recipe I've been making for about a year.

It's not an exact recipe, so it's easy to make.

Keto Bacon Onion Fig or Apple Jam

This make about 2 cups.

It is easy and delicious. Using the lesser amount of ingredients will finish in about half the time I've shown below. Doing so, I completed the recipe in about 30-40 minutes.

Serving Size 2 Tbs. 41 cals, 5g carbs. 2g fat. 2g protein.

Ingredients
6-10 slices thick cut bacon, chopped
1 medium or large onion, any type, finely chopped
6-12 fresh figs, de-stemmed, chopped, or
6-12 dried figs, reconstituted, chopped, or
1-2 apples, cored, chopped
1-2 Tbs Allulose sweetener. Can replace with honey, maple,syrup, or brown sugar which substantially increases the carbs.
1 Tbs Raw Apple Cider Vinegar
½ Tbs aged balsamic vinegar (optional)

Directions
Cook bacon over medium-high heat until just getting crispy. Do not drain the fat.

Add the chopped onions and fruit. Stir to mix well with the bacon. Cook until the water released by the meat and fruit is almost evaporated, stirring occasionally about every 5 minutes. Takes about 45 mins.

Reduce heat to medium‐low until it thickens to desired level. Do not let it burn. Stir as needed every 5 mins. Takes about 15-30 more minutes.

Turn off heat and allow to cool in the pan until warm to the touch. Transfer to a container and add the allulose and vinegar(s). Stir to blend.

Cover and keep in the refrigerator.

Spread on toast, crackers, or use in any savory/sweet combination, like a sandwich spread.

I love Bacon....I love onions....and I love figs! I'm on Keto.....this is going on the list! Will have to wait for fresh figs next season off my fig tree though....
Yep. This was probably my last fresh fig batch. When I use dried, reconstituted figs, I also use an apple. Juicy prunes work pretty good, too, but the texture is a bit different. I wasn't crazy about the reconstituted prune version. But, like I tell my wife, I eat all my mistakes.
